Blueberry Muffins with Suzanne Mokhtar

An easy on-the-go treat with a tangy twist.


  • 2 eggs

  • 225g light brown sugar

  • 110g butter

  • 240ml buttermilk

  • 300g flour

  • 125g blueberries


  1. Combine the eggs and sugar.

  2. Whisk in the butter and the buttermilk.

  3. Sift in the flour.

  4. Add the blueberries and scoop into a muffin tin.

  5. Bake at 200ºC for 20 minutes.
