An easy on-the-go treat with a tangy twist.
2 eggs
225g light brown sugar
110g butter
240ml buttermilk
300g flour
125g blueberries
Combine the eggs and sugar.
Whisk in the butter and the buttermilk.
Sift in the flour.
Add the blueberries and scoop into a muffin tin.
Bake at 200ºC for 20 minutes.
