Culinary instructor Chef Afifi shows us how to clean, cut, and cook a whole chicken at the MonAppetit Academy.
4 litres water
4 tbsp salt
3 tbsp sugar
medium white onion
3 cloves garlic
1 tbsp turmeric
Combine the water, salt, sugar, peppercorns, and cloves and bring to a boil.
Rinse the whole chicken in the brine once cooled and let sit for six hours.
Cut the chicken at the joints to separate it for cooking.
Sear the chicken in a tablespoon of cooking oil.
Remove the chicken and add the butter, onion, garlic, and chilis.
Once the onions turn translucent, add the fresh mint, turmeric, chicken, and cover to let cook.
