Vegan Spaghetti Bolognese Recipe

  • 1 tbsp olive oil

  • 1 carrot, cut into very small cubes

  • 1 onion, cut into very small cubes

  • 500g tomatoes, seeds removed

  • 1 garlic clove

  • Pinch of salt

  • Pinch of thyme

  • 1/2 cup walnuts, soaked

  • 1/2 cup cooked lentils


  1. Cook the spaghetti

  2. Crush the walnuts

  3. Puree the tomatoes and garlic

  4. Heat a skillet over medium heat, add onion, carrot, and a good pinch of salt

  5. Add the tomatoes puree

  6. Add water, then a pinch of thyme, and a pinch of salt

  7. Add the 1/2 cup of cooked lentils, then 1/2 cup of walnuts

  8. Stir and enjoy
