A Tale of Two Kitchens Brings Dubai's Moonrise to Khufu’s Bistro

Khufu’s Mostafa Seif and Moonrise’s Solemann Haddad unite for a 10-course four-hands dinner spanning Giza and Dubai.

A restaurant kitchen generally has one governing intelligence, which is already plenty. On September 14th, Khufu’s Bistro will install two. Chef Mostafa Seif of Khufu’s and Chef Solemann Haddad of Dubai’s Moonrise are joining forces for A Tale of Two Kitchens, a one-night, 10-course four-hands dinner.

The phrase “four hands” describes collaboration, although it also suggests the practical advantage of having twice the usual number available when ten courses must leave the kitchen. Across the evening, Seif and Haddad will bring the culinary languages of Giza and Dubai into conversation, using food to trace memory, place, technique and flavour.

The menu has not been positioned as a sequence of alternating signatures so much as a dialogue: familiar ingredients will change shape as the two chefs’ approaches cross paths, with fresh produce and seafood supplied by SEASALT. What belongs to one kitchen may begin a course; what belongs to the other may finish it.
