Canelé Pâtisserie has transformed its displays into edible winter galleries, featuring everything from decadent bûche de Noël and jewel-like raspberry tarts to regiments of whimsical iced biscuits from gingerbread men to christmas trees, each demanding admiration before consumption. The star of this year’s collection, however, is an exclusive creation: a Cherry Pavlova, a cloud-like confection of crisp meringue and pillowy cream, crowned with a glossy, seasonal scarlet flourish.
