Matcha Mob Brought Tokyo’s Viral Fried Sandos to Egypt’s North Coast

Matcha Mob is serving crispy Japanese fried sandos in Stella Sidi Abdelrahman with sweet and savoury fillings.

Matcha Mob has brought one of Tokyo's most talked-about street food snacks to its Stella, Sidi Abdelrahman outpost at the North Coast. The café is now serving Japanese Fried Sandos, or Age Sandos, with three fillings that lean both sweet and savoury.

Made with thick slices of fluffy Japanese milk bread, known as shokupan, the sandwich is deep-fried until the outside develops a crisp, golden shell while the inside stays soft. Instead of being stacked like a traditional sandwich, the bread is sliced into a pocket and filled generously, giving every bite a contrast of crunchy crust and pillowy bread.

Matcha Mob's version starts with a cream cheese base across all three sandos before each takes its own direction. The smoked salmon sando layers smoked salmon with fresh lettuce over the cream cheese, while the egg salad version pairs a creamy egg filling with lettuce for a lighter take.

On the sweeter side, the crème brûlée sando tops the cream cheese with sugar that's caramelized to create the signature crackly finish inspired by the classic dessert.
