Alexandria’s Sincero Is Serving Sourdough Panuozzo for Sohour

Sincero is taking sohour between bread with a lineup of sourdough panuozzo packed with eggs, cheese, halloumi and more.

Raneem Maaly

Alexandria’s Sincero has built a name for itself around one thing: sourdough. The pizzeria, run by husband-and-wife duo Sally Neves and Mohamed Tawfik, is best known for its naturally fermented dough and rustic approach to pizza, turning out airy crusts that have quietly earned the spot a loyal following along the coast.

This Ramadan, they’re putting that same sourdough to work in a different format for sohour . Instead of slices, Sincero is serving panuozzo, the Italian sandwich made with pizza dough that’s baked, sliced open, and stuffed to the brim.

The result sits somewhere between a sandwich and a folded pizza, making it a fitting sohour option: filling, warm, and easy to pile with everything from eggs and cheese to guacamole, halloumi, and pepperoni.

Naturally, Sincero’s version sticks to what they do best: their signature sourdough base, loaded with combinations that lean into both breakfast-style and savoury late-night cravings.

Here’s what’s on their sohour panuozzo lineup.

Mozzarella & Mushroom Panuozzo

Eggs, cream cheese, mushrooms and melted mozzarella come together in a creamy combo, finished with arugula.

Guacamole Panuozzo

Fluffy eggs layered with guacamole, tomatoes and arugula for a lighter sohour bite.

Grilled Halloumi Panuozzo

Grilled halloumi paired with guacamole bell peppers and arugula.

Red Cheddar & Turkey Panuozzo

Eggs, red cheddar, cream cheese and turkey stacked together for a classic  filling.

Cheese & Tomatoes Panuozzo

White cheese, tomatoes, olive oil, peppermint, and arugula for a fresh, herby bite.

Pepperoni Panuozzo

Eggs, pepperoni and buffalo mozzarella come together for a richer option, with arugula cutting through the indulgence.
