Alexandria’s Sincero has built a name for itself around one thing: sourdough. The pizzeria, run by husband-and-wife duo Sally Neves and Mohamed Tawfik, is best known for its naturally fermented dough and rustic approach to pizza, turning out airy crusts that have quietly earned the spot a loyal following along the coast.
This Ramadan, they’re putting that same sourdough to work in a different format for sohour . Instead of slices, Sincero is serving panuozzo, the Italian sandwich made with pizza dough that’s baked, sliced open, and stuffed to the brim.
The result sits somewhere between a sandwich and a folded pizza, making it a fitting sohour option: filling, warm, and easy to pile with everything from eggs and cheese to guacamole, halloumi, and pepperoni.
