What does one of MENA’s most celebrated chefs refuse to cook without?
For Mohamad Orfali, the answer is spices. The Aleppian chef behind Orfali Bros — the Dubai restaurant that spent three consecutive years at No. 1 on MENA’s 50 Best — has built a career travelling widely while repeatedly finding his way back to the flavours of home. There are certain things, he tells us, that simply have to travel with him.
So when Orfali brought Three Bros from Dubai to Egypt’s North Coast for the final WHEN WE EAT at Ramla residency, hosted at beachfront restaurant Moga, his indispensable spices came too. They are the ingredients he reaches for instinctively, the ones capable of following a chef from Aleppo to Dubai and, now, to a kitchen beside the Egyptian Mediterranean.
