These F&B Spots Are Serving Ritsa for Summer

Yes, the sea urchin is now a top on kofta sandwiches, ice cream and boba.

Farida El Shafie

This summer, something strange is happening. First, PAO introduced “Ritsa Boba”—a tapioca pearl inspired by a sea urchin, which is perfect if your idea of refreshment includes light dental peril. Then Dara’s Ice Cream dropped a “Ritsa swirl,” a frozen tribute to marine life, featuring a texture that can only be described as “courageous.” And now, Mayyal is serving actual grilled Ritsa on skewers, boldly asking the question: what if dinner poked back?

Is this a flavour trend or a coordinated attempt to see how far we'll go to feel something?
No one knows.

What we do know is that Egypt’s food scene appears to be under the charming delusion that the average consumer wakes up craving invertebrates.

Because whether it’s floating in your milk tea, melting on your cone, or skewered over hot coals, Ritsa is having a moment. And we are, for better or worse, complicit.
