Torshi - or pickles - are an Egyptian staple that date all the way back to the Pharaohs. Yeah, who would have thought that the simple process of leaving vegetables to ferment in brine or vinegar would have such a storied history? The legacy of the humble torshi is still very much alive, as we found out when we paid a visit to Sayed Salah El Din, The Torshagy of Helmeya, whose family has been in the pickling business for over half a century.
