One of MENA’s Best Bowls of Ramen Is Now on Egypt’s North Coast

There is ramen on Egypt's North Coast this week, and it happens to be coming from one of the most celebrated kitchens in the Middle East.

Kinoya, the Dubai ramen house with a Michelin Bib Gourmand and the No. 2 spot on MENA’s 50 Best Restaurants 2026, has decamped to Moga, Ramla by MARAKEZ’s beachside restaurant, from August 11th to 15th. At the stove is Kinoya’s Japanese head chef, Kenji Miura, whose arrival here is merely the latest geographic improbability in a career full of them.
Miura left Japan and kept moving - first through Jamaica and Trinidad & Tobago, where, more than a decade ago, he was already negotiating the peculiar business of cooking Japanese food for people who had grown up eating differently. He learned local appetites, developed a fondness for Trinidadian chow and, perhaps more importantly, learned where adaptation ends and a cook’s convictions begin.

Eventually, the road led to Dubai and Chef Neha Mishra. Their paths into Japanese cooking are almost inverse. Mishra taught herself ramen before turning a supper club around her dining table into Kinoya; Miura arrived with years of professional Japanese cooking behind him. Today, she develops the ramen menu while he leads the izakaya offering, the restaurant taking shape in the exchange between them.

Now Kinoya has been uprooted. Its five-day residency forms the second chapter of WHEN WE EAT at Ramla by MARAKEZ, hosted at Moga, following Chef José Luis Hinostroza’s Tulum restaurant Arca and preceding Dubai’s Three Bros.

For Miura, it is also a first encounter with Egypt. He has eaten kebda in Old Cairo and discovered that the country he had largely imagined through its pyramids also possesses an entire summer civilisation along the Mediterranean. It is a fitting revelation for a chef whose career has been spent discovering how much a place can complicate your idea of another.For five days, that place is Ramla — and Kinoya is seeing what happens when its Dubai kitchen meets the Egyptian coast.
