Inside Lebanon's Raw Meat Delicacy

When Babel Head Chef Marwan Zgheib walked us through the making of kibbeh nayyeh, we could never have imagined how rich and satiating the meat would taste.

This raw meat dish is a Levantine delicacy that we just had to try for ourselves. Kibbeh nayyeh, a dish whose name literally means raw meat, has a decidedly simple preparation process. The meat is seasoned with mint, onions, oil and other herbs, then moulded onto its final plate. At Lebanese restaurant Babel in New Cairo, the dish takes on a whole new identity.

Babel is open at 5A in New Cairo and has just opened its doors in Marassi at the North Coast for the summer, where you can try out the dish by the beach.
