Maadi’s Jamaican Kitchen Has Flown Under the Radar for Years

Jay’s, a cloud kitchen in Cairo’s expat-heavy suburb, has brought a focused menu from the island nation for three years

Nobody comes to Cairo expecting to find good jerk chicken. That's not a criticism — it's just geography. The Caribbean is far away, the spice profile doesn't naturally exist in this part of the world, and Cairo's relationship with "international cuisine" has historically meant Italian, Asian, or American for the burger-minded.

Jay's Jamaican Jerk, part of Kitchinco's cloud kitchen network in Maadi, with no dining room, no fanfare, and a menu short enough to read in thirty seconds, feels a little unlikely. In the best way.The menu is made up of four mains and two sides. Jerk chicken meal, jerk chicken sandwich, braised oxtails, a box version of the chicken for when you want the same thing but somehow more of it. The coconut rice comes under everything, cooked in coconut milk, doing important work. It’s the kind of side dish that makes you realise you've been eating inferior rice for years and have simply accepted it.

The oxtails are the thing to order if you're paying attention. They’re braised, served with butter beans and the coconut rice, and feels like someone put thought into it. The jerk chicken sandwich has grilled pineapple in it, which sounds like a gamble and isn't.

Cairo has a version of most cuisines. A translation, if you will. The original goes in, something gets lost along the way, and what comes out the other end is a dish that understood the assignment conceptually and then made adjustments nobody asked for. Jay's doesn't do that. It's specific in a way that suggests the people behind it actually care whether it tastes right, not just whether it sells.
